The Antico Casale di Scansano, with its riding centre, wellness centre and wonderful Tuscan nature, will reveal you the secrets of Maremma and Tuscan cuisine, a genuine tradition typical of farmhouse holidays.

After 3 days’ practical lessons, whilst creating and tasting your own dishes, our chef will teach you:

1st Day: Pasta in Tuscan Cuisine
The first cooking day we will concentrate on the main speciality of Italian and Tuscan cuisine, home made pasta (tagliatelle, tagliolini, gnocchi, tortelli with in-season fillings, brigoli and pappardelle).
2nd Day: Rural Tuscan Soups
The cooking course of specialities from Tuscan Maremma will, of course, teach you how to prepare our delicious rural soups – as the tasty Acquacotta (”Cooked Water”), using the precious Tuscan extra virgin olive oil and several special ingredients: mushrooms, Mediterranean vegetables, chickpeas, beans.
Discover the secret recipe of the famous Zuppa del Casale (Farmhouse soup). Learn how to cook delicious sauces with wild boar, early vegetables and bolognese sauce! Prepare tasty starters as Tuscan croutons and our tomato bruschetta (toasted bread).
3rd Day: Traditional Tuscan Cakes
» Panna Cotta – a kind of cream caramel – with mixed berries
» The typical Tozzetti (a kind of biscuit) served with vin santo (holy wine)
» Other special Sweet Cuddles
